Our farm is located in the heart of the village of Pailherols, between the Monts du Cantal and Aubrac and our cheese production uses traditional techniques.
Our farmhouse AOP Salers cheese is only made when the cows are grazing in the pastureland. Cantal cheese however is made all year round.
